Baked Egg Custard with Cheese and Herbs
This quiche-like baked egg custard with cheese and herbs is delicious! Bake in batches; it holds well but long baking time. Variations of cheese/herbs have potential. Tried the smoked gouda, and everyone thought it was outstanding. Might also try cheddar with basil/parsley.

Ingredients:
- 2 cups cheese such as gruyere or smoked gouda, coarsely grated
- ½ cup chives, chopped
- 10 eggs
- 1½ cups whole milk
- 4 oz cream cheese, softened
- ¼ tsp grated nutmeg
- ½ tsp pepper
- ¼ tsp salt
- hollandaise sauce for topping
Instructions:

Sprinkle gruyere and chives evenly into buttered shallow baking dish.

Blend eggs, milk, cream cheese, and nutmeg in blender with ½ tsp pepper and ¼ tsp salt till smooth.

Pour over gruyere and chives and bake at 350° F for 35-45 minutes until puffed, set, and golden.

Serve warm topped with hollandaise or at room temp.
